    1/4 cup apple juice, frozen concentrate

    1/4 cup maple syrup

    2 tablespoon onions, finely chopped

    2 teaspoon prepared mustard

Directions

    1. Heat grill to medium. Cut each hen down the backbone and spread flat on a cutting board. Rinse hens and pat dry. Combine remaining ingredients in a small saucepan. Bring to a boil, stirring occasionally. Cook 5 minutes, stirring occasionally. Remove from heat. Pour half of glaze mixture into a small bowl; reserve for drizzling on Cornish hens before serving.

    2. Place hens directly over burners or coals on grill. Grill hens, covered, 20 minutes, turning once. Spoon or brush hens with remaining glaze. Turn and baste again. Grill, covered, 10 to 15 minutes longer. Brush with glaze; turn and baste again. Grill, covered, 10 to 15 minutes longer or until done (internal temp 180ºF).

    3. Drizzle with reserved glaze mixture before serving.
